Macadamia, Coconut & Cacao Protein Bites

I love my sweet treats, it's always been a problem! My willpower is seriously challenged when faced with devil food like chocolate, cake, biscuits, dessert... well anything with a beautiful non-natural sweetness to it!
In order to avoid the daily snacking on any of the above I have taken matters into my own hands and left them off the shopping list BUT for my own sanity and to keep the cravings at bay I have resorted to other alternatives.
These delicious bites definitely take the edge off and are most importantly guilt free!
Ingredients:
(Makes approx. eight)
  • 500g Macadamia Nuts
  • 80g Coconut Sugar / Xylitol
  • 2 tbsp. Desiccated Coconut plus extra for coating
  • 4 tbsp. Raw Cacao Powder
  • 75ml Coconut Milk
  • 1 tbsp. Macca Powder (optional)

Method:
Whizz the macadamia nuts in the food processor until fine, add the rest of the ingredients and pulse until well combined.
Take the mixture from the food processor and make into small patties then roll in the desiccated coconut.
Pop in the fridge to harden.
N.B. If you prefer a little more sweetness you could add a tablespoon of maple syrup or finely chopped dates.

3-Tier Salted Caramel Chocolate Fudge Cake

It's was my "baby sister's" 20th birthday a few days ago, so to celebrate I opted to make my most indulgent cake recipe to date and what a mega treat it was, taken from two female chefs, Peggy Porschen and Ren Behan. Crispy Baked Potatoes with Rosemary & Parmesan

This side dish goes with anything and happens to be a childhood favourite of mine... Ingredients: (Serves Four) 1kg, Maris Piper Potatoes Extra Virgin Olive Oil Rosemary 1 clove of garlic, whole   Salt & Pepper Parmesan, grated Preheat oven to 200C - with the baking tray inside. Wash and peel the potatoes. Cut the potatoes into small pieces and dry with kitchen towel. Take the heated baking tray from the oven and place on the hob (medium heat) adding a generous drizzle of olive oil, potatoes, salt, pepper, garlic and rosemary. Mix well making sure the potatoes are well coated. Roast in the oven for at least 35mins, during that time turn the potatoes regularly with a spatula to ensure an even colour. Add the grated Parmesan and roast for another 5-6mins. Remove the potatoes from the oven, season to taste, then serve.
